Oolong teas are produced through a complicated series of steps designed to partially oxidize the leaves and enhance their character an aroma. The finest Oolongs are made from very large freshly plucked leaves, that curl during preparation, but open intact when infused with boiling water. The leaves are only partially fermented, as opposed to blacks which undergo a longer fermentation period, to achieve a flowery, spicy full cup. This short fermentation places them halfway between black teas and green teas.

Grown in South China and Formosa (Taiwan), Oolong teas tend to be very floral in aroma and are rich in anti-oxidants-offering numerous healthy benefits.

Oolong teas may be considered intermediate between green teas and black teas. Like green teas, the have a generally light character, but like black teas they tend to have stronger and more robust flavors and aromas.
